Marinated Cucumber

One of my favorite ways to dress up a sandwich or add in wraps is marinated cucumbers. They take the taste to the next level and add a tangy yummy crunch.

What you need

tbsp monk fruit extract

tsp salt

white vinegar

cucumber
Instructions
1️⃣Add vinegar to a big glass container, then add the sugar and salt and stir well. 2️⃣Let rest for 2-3 minutes till the sugar dissolves and stir again. 3️⃣Add the dill and the cucumber slices and let it soak for a few hours in the fridge or overnight. 4️⃣Now you can eat them as they are or add them to any type of sandwich or wraps or salads- enjoy!
