What you need

cup rice drink

mango

tbsp blueberry jam

cup chia seed

cup non-dairy milk
Instructions
✔️Grab a mixing bowl and add the chia and apricot jam. Give it a good stir and then add milk until you can’t see any jam clumps ✔️Let this mixture sit at room temp for 10 minutes. ✔️Now, cover the bowl and put it in the refrigerator. It’s best to let it hang out in there for at least 2 hours, or you can even leave it overnight if you’ve got the time. This gives the chia seeds a chance to plump up and work their magic, creating that creamy, pudding-like texture we’re aiming for. ✔️Next, prepare the mango. Peel it and cut it into small cubes. Once that’s done, squeeze some lime juice over the diced mango for a refreshing kick. Zest in some of the lime. 😊 ✔️Alright, time to grab the chilled chia pudding from the fridge. Give it a good stir before serving. If it seems too thick for your liking, feel free to add a splash of milk to loosen it up a bit. ✔️Now, divide the chia pudding into your serving glasses or bowls. Add a layer of mango purée (I bought mine from Amazon- you can buy any brand, or buy from the. Indian grocery store). Finally, top each portion with the diced mango with lime zest- yum. ✔️Last step, enjoy your chilled and delicious chia pudding! Serves 2.View original recipe
