What you need

cup tamarind concentrate

tsp salt

tsp chili powder

tsp cumin powder

tsp coriander powder

bunch cilantro

ginger

onion

cup yogurt

medjool dates

Instructions
1: Boil and mash the potatoes. Add chili powder, coriander powder, and salt. Set aside. 2: Beat the yogurt and add water if needed, along with salt and sugar. Set aside. 3: For the green chutney, blend cilantro, ginger, green chilies, Greek yogurt, and salt until smooth. Set aside. 4: For the tamarind chutney, combine tamarind concentrate, water, and dates in a pot and boil until dates are tender. Cool and blend into a paste. Add cumin powder, black salt, and sugar to taste, then set aside. 5: Finely chop half an onion and cilantro, and set aside. 6: Keep a bowl of sev at hand. 7: Assemble the puris with the potato filling, yogurt, green chutney, tamarind chutney, and top with onion, sev, and cilantro.
