Indian desserts usually consist of at least one or two dairy ingredients, whether paneer, ghee or milk. Gajar Halwa is a carrot pudding very popular in India, especially during fall and winter months when there are many holidays and festivals. It’s usually loaded with ghee which is clarified butter. For Diwali I came up with a vegan version of this popular dessert- hope you’ll try it!
