No Bake Mango Cheesecake

I love no bake desserts and this one I make every summer. It is so delicious and everyone loves it!

1. Grease an 7-inch springform pan with butter. set aside. 2. In a large mixing bowl, combine crushed ginger biscuit and melted butter. 3. Add the mixture to the pan, and press lightly to make a base. 4. Refrigerate for 15 minutes. 5. Now make the filling. In a small bowl, add water, sprinkle gelatin powder. mix well and set aside for 5 minutes - it will turn gelatinous. 6. In a large mixing bowl, using an electric mixer, mix cream cheese, and powdered sugar. mix until creamy and soft. Add heavy (whipping) cream and whip till smooth and fluffy. Add the mango pulp and gelatin mixture and mix until well combined. 7. Pour this mango mixture over the base, use a spatula and scrape everything on. 8. Cover and refrigerate overnight. 9.Top with mango pulp if you wish, some fresh mango pieces, raspberries and some mint and enjoy!
